Chef Patrick discovered kombucha wile living in Taiwan. He identified 3 key benefits: #1. It calms the stomach. #2. It is a source of energy. And #3. it helps weight management. Upon returning to Ireland he started to make his own uniquely Irish kombucha using local ingredients for family and friends. It didn’t take long for the demand to increase and the need for Chef Patrick to introduce Celtic Kombucha.

Celtic Kombucha is an organic, artisan brand, hand made in small batches in County Clare. He often selects local healthy ingredients from his surrounding area. Carrageen from the bay, honey from the Burren and carrots from the bog.

To achieve maximum health benefits all ingredients are raw.  Juices are cold press, unfiltered and unpasteurized to get the full probiotic benefit. 

The good news is doesn’t have a lot of sugar, calories, sodium and no gluten or dairy. Rich with vitamins and a source of probiotics which help to build the immune system. And it promotes gut health as it protects the body with antioxidants to fight oxidative damage caused by free radicles.  

The Bay, The Burren and The Bog

Chef Patrick looks for local ingredients known to be rich in nutrients, minerals and associated with health benefits.  He refers to this important area as his 3B’s, the Bay, the Burren and the Bog.

The Bay: Carrageen from the Bay  is rich in minerals and vitamins, fat free and a source of protein.  It has been a natural health remedy for generations used to aid digestion, detoxification as it aids toxins elimination. Patrick’s own grandfather use to make a carrageen syrup as a therapy to reduce symptoms associated with a cold. 

The Burren: Honey from the Burren benefits from the distinctive limestone landscape. The biodiversity and bioactive plant compounds from the Burren are known for antioxidant power and have even been linked to promoting heart health.

The Bog: Carrots from the Bog can be a great source for beta carotene, fiber, vitamin K1, potassium and antioxidants and have been linked to lowering cholesterol levels and improving eye health.
